Sour herring salad
About the recipe
I can sometimes have a real craving for this. Fresh and sour on a piece of toast (retro), toasted bread, baguette or just a scoop in your mouth! Freshly made, delicious, evening in the fridge, chilled ...... delicious on a warm day with drinks!!

Ingredients and supplies
- 1 jar of pickled herring
- 500 g beets (pre-cooked)
- 1 large onion
- 100 g gherkins/cornichons
- 3 tbsp mayonnaise (you can also replace it with Turkish yogurt)
- some pepper
Prep-work
- Chop the onion.
- Chop the gherkins/cornichons into small pieces.
- Cut the beets into half cm cubes (but don't worry, not too small and no big chunks....)
- You can also grate it, but I prefer it cubed.
Herring:
- Remove the dorsal fin from the herring,
- cut the halves apart and place on top of each other
- cut in half lengthwise
- Cut the strips into pieces of 0.5 to 1 cm
Preparation
I put everything in the bowl or plastic container.
Add some fresh pepper.
Stir well until everything has a faint red/pink color (doesn't look pretty! but it tastes good!).
Samples!
That's it! Let the drinks begin.
Also delicious with 3 or 4 boiled potatoes cut into pieces.
