Fennel, roasted in the oven

Roasted fennel has a delicious aniseed flavour and is perfect as a side dish for baked salmon! This simple yet flavourful dish adds a fresh and aromatic touch to your meal.

Ingredients and supplies
- 3 fennel bulbs
- some olive oil, extra virgin
- half a lemon
- salt and pepper to taste
- 2 sprigs of thyme or half a tbsp dried thyme
- 2 sprigs of rosemary or 1 tbsp dried rosemary
Prep-work
Cut the fennel fronds, chop finely and reserve
Remove the hard core of the fennel and peel the fennel leaves.
Cut the hard fennel core into thin slices/pieces and cut the leaves into strips.
If you have fresh rosemary and thyme, chop finely.
Preparation
Preheat the oven to 200 degrees.
Place the fennel in the baking dish.
Turn the mill (or sprinkle loose salt) over the fennel pieces
Sprinkle the fennel with the oil (generously)
Sprinkle with pepper. (We also added some crushed black pepper).
Sprinkle the thyme and rosemary over it.
Place in the oven for about 45 minutes (check after 30 minutes)
Just before serving, divide the finely chopped fennel fronds over the serving dish and sprinkle with some juice of half a lemon.
