Ingredients and supplies

  • 4 large potatoes
  • 2 onions
  • 5 eggs
  • salt and pepper to taste
  • some olive oil

  • 1 bell pepper
  • package of chopped bacon
  • 100 gr chorizo sausage

Prep-work

Peel the potatoes and cut them into slices.

Peel the onions and cut them into thin rings.

Preparation

Heat oil in a frying pan and fry the potatoes and onion over a low heat for about 20 minutes.

Stir the mixture regularly and make sure that the potatoes and onions do not brown.

When the potatoes are soft, remove the mixture from the pan with a slotted spoon.

Beat the eggs and stir into the potato and onion mixture.

Add salt and pepper.

Heat the (cleaned) frying pan again and heat a dash of olive oil.

Pour egg mixture into pan and cook over medium heat, shaking vigorously.

Using a spatula, push the sides of the tortilla slightly inwards, creating nice rounded edges. Once the bottom is golden brown and firm, place the plate on the tortilla, turn together and carefully slide the tortilla, bottom side up, back into the pan.

Bake the other side for about 3 minutes until cooked and golden brown.

Cut the tortilla into pieces and serve on a plate.

Tortilla can be eaten hot or cold.

Variation:
- add a finely chopped pepper and fry with the potatoes
- add bacon cubes and fry along
- add pieces of chorizo sausage and fry.
