Ingredients and supplies
- 1 egg
- 1 tsp mustard
- dash of lemon juice
- some salt and pepper
- 300 ml sunflower oil
- 2 oranges
- 4 tbsp capers
- 6 tbsp Greek yogurt

Preparation
Take the tall narrow bowl and put the egg without shell, the mustard, the lemon juice and salt and pepper in it. Slowly pour the 300 ml sunflower oil on it.
Place the hand blender on the bottom and turn it on.
Let it mix briefly at the bottom and then slowly pull the hand blender upwards while mixing.
Once you reach the very top, move the hand blender up and down a few times until everything is well mixed and you have mayonnaise.
Scrub the oranges well and grate the peel without removing the white part of the peel, as this is bitter and not tasty.
Add these peels to the mayonnaise.
Squeeze 1 orange and add the juice. Stir briefly.
Add the capers and Greek yogurt and stir everything well.
Taste it now. Maybe add some salt or pepper?
The dressing is best after it has been left to infuse in the refrigerator for an hour.
