Ingredients and supplies
- 300 ml whipped cream
- 60 g sugar
- 1 lemon
- few mint leaves
Prep-work
Historically, a "posset" (from English) is a drink made from hot milk curdled with beer, wine, or other alcoholic beverage and typically flavored with spices, drunk as a delicacy or as a remedy for colds.
Nowadays a cold dessert made from thickened cream, usually flavoured with lemon.
Now that we know this... this is a terribly delicious fresh and velvety soft dessert. We know the recipe from Janneke Vreugdenhil from her NRC column of June 22, 2007! Here is the link!
Recipe only adapted to 4 persons! What is perfect does not need to be changed.
You can make this well in advance, as long as it is refrigerated.
Preparation
- Add the sugar and bring to the boil while stirring.
- Reduce the heat to low and let the cream simmer for one minute.
- Turn off the heat and let the cream cool.
- Stir in the lemon juice (optionally you can also add the lemon zest).
The acid causes the cream to thicken. - Pour the liquid into 4 glasses or bowls.
- Add a mint leaf.
- Cover with cling film and let the possets stiffen in the refrigerator for at least five hours.
