Prep-work
Nothing special. This is also easy to make in advance!
There were four of us and we easily ate 2 kebab rolls each!
Preparation
Kebabs:
Finely chop the onion, garlic and chili peppers.
Cut the stems from the bunch of coriander.
Mix the minced lamb, finely chopped vegetables/herbs and spices in a large bowl. Roll into small koftas (rolls of about 4 cm)
Fry them in a grill or frying pan until nicely brown.
Sauce:
In the meantime, make the sauce by mixing all the ingredients.
Sumac are finely ground sour berries, you can also replace this with lemon zest and some lemon juice. The sauce should taste fresh and sour.
Salad:
For the salad, cut the onion into half rings and place the rings in a bowl of cold water to take the edge off the onion.
Finely chop the mint and coriander and cut the cucumber and tomato into wedges.
How do you eat it?
Heat the Lebanese bread briefly in the microwave. Take a Lebanese bread (flat bread) and put a tablespoon of sauce on it, divide the koftas lengthwise and add the salad, drizzle some more sauce over it and roll up the bread.
This way, everyone can decide for themselves how spicy or which elements they want more, less or none of.
Enjoy your meal!
