Found this dish on the internet and adapted it. For example, we used minced chicken and our own spice mix, added lentils and some more beans.

A somewhat laborious recipe due to the rolling of the mass in cabbage leaves, but it is very tasty and the cabbage gives a nice "bite".

  • 1 Savoy cabbage (other cabbage is also allowed as long as it is loose-leaf)
  • 300 gr minced beef or chicken
  • 2 onions
  • 2 cloves of garlic
  • 1 bell pepper
  • 1 can tomato (diced)
  • 1 can tomato puree
  • 100 g grated cheese (more is also possible)
  • 1 can of kidney beans (100 gr)
  • 150 g white beans (washed 50 g dried, after 24 hours in water 150 g)
  • 1 can of lentils (125 g)
  • salt and pepper to taste
  • 2 tsp vegetable oil
  • (taco) Herb mix

We left out the can of corn because we don't like it that much.

You can also add a fresh Spanish pepper, nice and spicy!

Prep-work

  • Chop the onions and garlic and cut the pepper into pieces.
  • Make your own spice mix (we used Eefje's with some extra cayenne pepper) or use a bag.
  • Remove as many whole leaves from the cabbage as possible (you will need about 12 nice ones)
  • Remove the thickest part of the leaf.
  • Cut the rest/core of the cabbage into small pieces (we use the whole cabbage!)
  • Blanch the cabbage leaves in boiling water for 2 to max 3 minutes (about 3 at a time), drain well or dry slightly.
  • Grease the baking dish.

Preparation

Grab a large pan (snack or gravy/casserole pan) because there is quite a bit of volume and you want to stir it freely.

  • Add oil and heat over high heat.
  • Throw in the onions, then the garlic and pepper.
  • When it is nicely cooked, add the minced meat and the spice mix and fry until crumbly.
  • Then shake the can of tomatoes empty and immediately add the rest; the tomato puree, beans, lentils and the finely chopped cabbage.

Let this sit on low heat for about 10 minutes, stirring occasionally so that it doesn't stick to the bottom.

It shouldn't become a soggy mess, so let the moisture evaporate by leaving the lid off the pan.

If it's not too wet we can start rolling.

Preheat oven to 180 degrees Celsius.

Place a cabbage leaf on your work surface; fill (with minced meat and some grated cheese) and roll!

Try it out yourself to see what is useful, think of a large "blind tick".

...and place on a plate.

Once you have filled all the sheets you may have some minced meat mixture left over.

Pour this into the baking dish and spread evenly.

Then place the burrito rolls on top.

Sprinkle moderately (or generously) with grated cheese.

Put in the oven for 20 minutes, then check and determine if it needs a little longer (depends on your oven). The mince is already cooked so it's just a matter of warming it up and gratinating the cheese.
