Ingredients and supplies
3 kg veal spare ribs
- 1 tbsp salt
- 1 tbsp brown caster sugar
- 1 tbsp paprika powder
- 1 tbsp cumin powder (djinten)
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp sumac
- 1 tsp pul biber (or more if you like it spicy)
For the BBQ sauce:
- 250 ml ketchup
- 30 ml Worcestershire sauce
- 1 tbsp hot mustard
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp cumin powder
- 1 tsp dried thyme
- 1 tsp pul biber (or more if you like it spicy)
- 1 tsp smoked paprika powder
- 1 tbsp brown caster sugar
Prep-work
Mix these herbs together and rub the veal ribs with them well on both sides.
Place them in a sealed container in the refrigerator overnight (12 hours).
Preparation
Preparation of the ribs:
Preheat the convection oven to 160 degrees.
Remove the marinated veal ribs from the refrigerator and place them with the hollow side down on a
oven rack. Cover with aluminum foil. Fill an oven tray with a layer of water of 1 cm and place the rack with meat on it and place for 2 hours in the middle of the oven.
After cooking in the oven for 2 hours, brush the veal ribs on both sides with this BBQ sauce and brown them for another half hour in the top of the oven without foil.
This is going to be delicious!
Preparation BBQ sauce:
Mix all ingredients together in a saucepan.
Bring to the boil and simmer for 30 minutes, stirring occasionally.
