The Dubai chocolate bar has been a popular treat since 2021 that originated in Dubai.
This bar combines a crunchy kadayif filling and creamy pistachio with a rich chocolate coating.
The unique interplay of textures and flavours has made the bar popular worldwide.

Ingredients and supplies
400 grams of chocolate of your choice: milk, dark or white
100 grams of kadayif (available at the Islamic shop)
25 grams of butter
200 grams of pistachio cream (available at Islamic shops or AH)
50 grams tahini
70 grams chopped pistachio nuts
2 plastic containers (in which the Chinese give their dishes)

I use the couverture chocolate that I bring from Germany.
This chocolate is a bit creamier and is used by pastry chefs and works very finely.

Prep-work
You can go straight to preparing the recipe!
Preparation
Place 200 g (half) chopped chocolate in a microwave-safe bowl in the microwave.
Heat the chocolate for 2 minutes at about 320 watts and stir.
Do this until the chocolate is around 31 grams.
Divide the warm chocolate over the 2 bowls and turn them around to create a 3 cm high, firm chocolate edge.
Place the containers in the refrigerator.
Fry the kadayif in 25g of butter until brown and crispy, transfer to the container in which you are making the filling and let it cool.
Once cooled, add the pistachio cream, tahini and 35 grams of chopped pistachios and stir well.
Remove the cups with chocolate from the refrigerator and divide the filling so that there is some space all around so that the top layer of chocolate also seals the filling on the sides.
Divide the remaining chopped pistachios over the bar of chocolate.
Place the lid on the container and place in the refrigerator for 2 hours to harden.
Remove the containers from the refrigerator and loosen the outside of the container by moving the container around and pressing the bottom up with your fingers.
There it is...your patience will be richly rewarded!
Cut the bar into bite-sized pieces and taste the crunchy, creamy, rich Dubai chocolate bar.
