We love going on a winter sports holiday to France. The advantages: straight from your apartment to the slopes, often good weather, wide slopes and delicious food. If possible, we have a piece of lemon or chocolate cake for dessert.

Ingredients and supplies

Dough:

  • 200 g flour
  • 133 g butter
  • 66 g caster sugar
  • Pinch of salt
  • Zest of 1 lemon (optional)

Chocolate filling:

  • 450 g dark chocolate
  • 3 dl whipped cream
  • 4 egg yolks
  • 50 g soft butter
  • 1 vanilla pod (optional)

You will also need a 27cm springform pan or oven dish.

Preparation

The base:

  • In a bowl, quickly mix the flour, butter, sugar, salt and zest together.
  • Grease the baking tin and line the baking tin with the dough.
  • Prick the base and the edge with a fork.
  • Cover the dough and put it in the fridge for about an hour.
  • Preheat the oven to 180 c.
  • Bake the base blind for 20 minutes. (Place kitchen paper on top and add support filling (just search the internet)).

The chocolate filling:

  • Cut the vanilla pod in half lengthwise and put it in a pan with the chocolate and cream.
  • Put the pan on a low heat, let the chocolate melt and stir until it is smooth and pure.
  • Remove the vanilla pod.
  • Off the heat, beat the egg yolks into the chocolate, followed by the butter cut into cubes.
  • Pour the chocolate cream into the cake base and let it cool to room temperature.
