Ingredients and supplies
- 150 ml water
- 225 g flour
- 1 tsp salt
- 1 tbsp sunflower oil (or ghee or melted butter)

Mix everything together and knead vigorously until you have a nice, smooth, dry ball of dough.
If it is too moist add some flour. If it is crumbly... some water.
Then let it rise for 30 minutes under a damp (tea) towel.
Then knead again and divide into 8 balls. Flour your counter and roll out until a pancake is formed that fits in your frying pan.
Heat the frying pan until it is very hot then reduce the heat to half (and keep playing with it) without butter or oil. Fry the chapatti until dark spots appear (not quite burnt).
Turn over and do again. Turn over. When both sides have light dark spots it is ready. Store under a damp cloth.
While it is baking, roll out the next chapatti and bake them one by one.
Also delicious if you spread the Chapatti with ghee (Indian clarified butter) or melted butter!
