Ingredients and supplies

  • 2 or 3 heads of broccoli (about 500 gr)
  • 2 onions
  • 3 cloves of garlic
  • cubes of bullion (1 per half liter of water)
  • 200 gr/roll goat cheese or 200ml cream
  • some olive oil

Prep-work

Follow the flow.

Preparation

Chop the onion and garlic.

Put a generous dash of oil in the soup pan and place on high heat.

When the oil is hot, reduce the heat to low and add the onions and garlic, stir and fry gently.

Cut the broccoli into florets, remove the stem from the bottom and cut into small pieces.

Now that the onions and garlic are nice and fruity throw the broccoli in the pan, turn the heat up and let it fry for a while. A few minutes, max 5 min.

Add enough water to just cover the broccoli, usually a little over a litre.

Add a cube of bullion (chicken, beef, vegetable, etc.) for every half liter.

Add the goat cheese, torn or cut into pieces.

Let it cook for about 15 to 20 minutes.

Grab your hand blender and puree everything until smooth.

Serve with a cloud of cream or crème fraîche.
