Ingredients and supplies
Choux pastry:
- 100 ml milk
- 100 ml water
- 100 gr flour
- 100 g butter
- 4 eggs
- pinch of salt
Glaze:
- 100 g chocolate (dark/bitter)
- 100 g butter
- 1/2 tbsp water
Filling:
- 400 ml whipped cream
- 2 sachets of whipped cream
- 40 gr (vanilla) sugar
Prep-work
No preparations, just get started right away.
Preparation
Preheat the oven to 200 degrees.
- Bring milk, water, butter and salt to the boil in a saucepan.
- Stir in the flour and cook until cooked through, about 5 minutes.
- Remove the pan from the heat and scoop the batter into a bowl.
- Stir in the eggs one by one.
- Spoon the batter into a piping bag fitted with a plain nozzle.
Line a baking tray with baking paper.
- Pipe large portions of batter onto this.
- Bake the puffs in the oven for about 25 minutes until golden brown and cooked through.
- Let the puffs cool in the oven.
Filling:
- Beat the whipped cream with the whip stabilizer and (vanilla) sugar until stiff.
- Spoon the whipped cream into a piping bag.
- But make a hole in the bottom of the baked puffs and squirt the whipped cream into it.
Glaze:
Melt the chocolate with the butter and water in a bain-marie.
2 ways to proceed,
1 - Pour chocolate over the ball and use a spoon.
2 - Dip the puffs in the cooled icing and let them harden in a cool place.
