Ingredients and supplies

  • 75 g oatmeal
  • 50 g coconut flour
  • 50 g almond flour
  • 1 tbsp cocoa
  • 1 tbsp cinnamon
  • 2 tsp baking soda
  • 3 bananas
  • 3 eggs
  • 4 dates
  • 3 tbsp sunflower oil
  • 4 tbsp cacao nibs
  • 2 tbsp sunflower seeds
  • 2 tbsp pumpkin seeds
  • 2 tbsp linseed
  • 4 tbsp cranberries
  • 12 or more nuts to taste
  • 2 tbsp sesame seeds

Preparation

Take a mixing bowl and add oats, coconut flour, almond flour, cocoa, cinnamon and baking soda.

Peel the bananas and add them in pieces, as well as the eggs without the skin, the dates in pieces without the pit and the sunflower oil.
Place the stick blender in here and mix until you have a fairly smooth substance. As coarse as you want.

Preheat the oven to 200 degrees.

Add the cacao nibs, all the seeds, linseed and cranberries and stir.
Fill the muffin tin with the paper cups and divide the mixture into them.
Press one or more nuts into each muffin and sprinkle with some sesame seeds.
Place the tin in the oven and bake for 40 minutes.

After baking, remove the muffins from the tin, let them cool and store them in a sealed container in the refrigerator.

Delicious for breakfast with a cup of coffee or tea!
