Grandma's Carrot Cake

At the request of one of our sons for the recipes of Grandma's Christmas Bundt Cake, Grandma wrote down the recipe in 2018. Here you can find the recipe as she wrote it down, we made the cake ourselves.

Ingredients and supplies
For the cake
- 300 g cake flour
- 150 g sugar
- 150 g butter or margarine
- 2 eggs
- 200 gr carrot/parsley
- 150 g raisins
- 150 g pecan nuts
- 3 tbsp Amaretto
- 1 tsp cinnamon
- some salt
For the topping/icing
- 50 g butter
- 100 g cream cheese (MonChou)
- 125 g icing sugar
- 1 sachet of vanilla sugar
Other requirements: Flat (butter cake) pan
Prep-work
The carrot will probably need to be chopped or grated, but that wasn't in her description
Preparation
Please note that Grandma makes the turban with an old gas oven (ETNA)! So experiment a bit with the gas setting / temperatures!
- Melt butter,
- Grate the carrot.
- Mix the carrot, sugar, salt, eggs and flour well.
- Add nuts, raisins, cinnamon and Amaretto and mix well.
Put in the mold.
Preheat the gas setting to about 175 degrees and bake for 45 minutes until golden brown. Place in the middle of the oven.
Topping/icing:
Let the butter soften, add the cream cheese, icing sugar and vanilla sugar and mix until smooth. Store in the refrigerator. After cutting, spread over the cake slice.
