Ingredients and supplies
- 20 g butter
- 1 small onion or shallot
- 2 tbsp whole green peppers
- 2 tbsp cognac
- 200 g fresh cream (1 container)
- salt and pepper to taste
Once you have cooked your chosen piece of meat, let it rest in a piece of aluminum foil. Once the sauce is ready, you can serve the meat with the sauce.

Chop the onion/shallot
Preparation
Use the leftovers from the meat you've fried. You can also do that if you don't have any, but it will be less flavorful!
Melt the butter in the frying pan, medium heat.
Fry the onion/shallot there.
Add the cognac (and if you want to put on a show; light the alcohol).
Add the crème fresh to the pan and stir until it has an even colour.
Taste and add (preferably ground) pepper and salt.
Let it simmer for a while and keep warm on low heat until you want to serve.
