Pork cheeks in Trappist beer

Ingredients
16 pork belly
4-5 finely chopped onions
4-6 finely chopped garlic cloves
100 g smoked bacon (optional)
1 bottle of Trappist beer
2 tbsp mustard
1 tsp thyme
2 bay leaves
You can replace 100 ml of stock (beef or veal) with stock cubes
1 tbsp white wine vinegar
2 tbsp flour
salt and pepper to taste
cup of cream (optional)

In the original recipe, cream was added. We have omitted this.

Mis en place
Finely chop the onions and garlic.
Don't make it difficult, but look at the pork cheeks and try to remove as much membranes, hard pieces and loose fat as possible.
Preparation
Salt and pepper the cheeks.
Fry the pork cheeks in some oil and butter.
Remove them from the pan,

In the same pan, fry the onion until brown, add the flour at the end and fry for another 2 minutes.
Add beer, mustard, herbs, vinegar and stock.
Stir well.
Cook the meat for 2 - 2.5 hours.

Some more vinegar? Salt or pepper?
