Spinach soup with mint and coriander

Ingredients
1 pack of frozen spinach
or 1 kg fresh spinach2 large onions, chopped
2 cloves garlic, coarsely chopped
1 green chili pepper
1 bunch mint, coarsely chopped
1 bunch coriander, coarsely chopped
1 liter vegetable stock (1 liter water with 2 cubes)
1 lemon, squeezed
Pinch of ground nutmeg
Salt and pepper to taste
little vegetable oil

Surprisingly tasty (meal) soup, delicious with crusty bread or a sandwich.
Mis en place
Chop the onions and chili pepper.
Coarsely chop the garlic, mint and coriander.
Squeeze the lemon.
Preparation
Heat the oil in a large pan and fry the onions, garlic and chili pepper for 10 minutes until soft.
Add the stock and spinach, bring to the boil and let the soup simmer for 15 minutes.

Add mint, coriander, nutmeg, salt and pepper to taste and cook for 2 minutes.
Use a hand blender and puree the soup into a coarse puree.

Spoon the soup into bowls and add some yogurt.
