Spinach soup with herb cheese (boursin)

For 4 persons

Total preparation: 20 min


  • 1 pack of frozen spinach (cubes)

  • 1 onion

  • 1 liter stock (cube)

  • 1 pack of herb cheese (own brand or boursin)

  • 2 tbsp olive oil

  • salt and pepper to taste

delicious with croutons (recipe elsewhere on the site).

    Chop the onion and fry it in hot oil in a (cooking) pan.

    Add the cubes of frozen spinach with the stock.

    Let it cook for 3 minutes and add the herb cheese.

    Once the cheese has melted you can puree the soup with a hand blender.

    Season with salt and pepper.

    Spoon the soup into a bowl/plate and add the garlic croutons at the last minute.....

    or serve with a piece of baguette.
