Preparation
Peel potatoes and cut into slices.
Peel onions and cut into thin rings.
Heat oil in a frying pan and fry the potato over low heat for about 20 minutes.
Stir the mixture regularly and make sure that the potatoes and onions do not turn brown.
When potatoes are soft, remove mixture from pan with slotted spoon.
Beat eggs and stir into potato-onion mixture.
Add salt and pepper.
Heat the (cleaned) frying pan again and heat a dash of olive oil.
Spoon the egg mixture into a pan and fry over medium heat while shaking vigorously.
Using a holding spatula, push the sides of the tortilla in slightly to create nice rounded sides. As soon as the underside is golden brown and firm, place a plate on the tortilla, turn together and carefully slide the tortilla with the underside upwards back into the pan.
Fry the other side for about 3 minutes until done and golden brown.
Cut the tortilla into pieces and serve on a plate.
Tortilla can be eaten hot or cold.
Variation:
- add a finely chopped pepper and fry with the potatoes
- add bacon cubes and fry
- add pieces of chorizo sausage and fry.
