Orange dressing

Quantity: 600 ml

Ingredients

  • 1 egg

  • 1 tsp mustard

  • dash of lemon juice

  • some salt and pepper

  • 300 ml sunflower oil

  • 2 oranges

  • 4 tbsp capers

  • 6 tbsp Greek yogurt

Other supplies

high narrow bowl, hand blender, fine grater to grate orange peel

    Preparation

    Take the tall, narrow bowl and add the peeled egg, mustard, lemon juice and salt and pepper. Slowly pour the 300 ml sunflower oil on top.

    ​

    Place the hand blender on the bottom and turn it on.

    ​

    Let it mix for a while at the bottom and then pull the hand blender up very slowly while mixing.

    When you get all the way to the top, move the hand blender up and down a few times until everything is well mixed and you have mayonnaise.

    Scrub the oranges thoroughly and grate the peel without grating the white of the peel, as this is bitter and not tasty.

    Add these peels to the mayonnaise.

    Squeeze 1 orange and add the juice as well. Stir through.

    Add the capers and Greek yogurt and stir everything together well.

    Now have a taste. Maybe add some salt or pepper?

    ​

    The dressing tastes best if it has been allowed to steep in the refrigerator for an hour.
