Masala omelette

  • 6 eggs

  • 25 ml of water

  • black pepper to taste

  • 3 tbsp oil (for frying)

  • 2 spring onions

  • 1 tsp garam masala

  • 1 fresh green pepper

  • 1 tsp cumin (ground)

  • half pepper

  • 2 tomatoes

  • Handful of fresh coriander

  • salt and pepper to taste


Cut the spring onion into rings and chop the green pepper into pieces.

Fry the spring onion in 1 tbsp oil until soft.

Add garam masala, cumin, chopped paprika, green pepper.

Fry stirring for 2 minutes.

In the meantime, cut the tomatoes into small pieces and add.

Let cool.

Beat the 6 eggs with water, salt and pepper.

Add the cooled spring onion mixture.

Place the frying pan on fire with some oil.

When the pan is hot, throw the mixture in and fry the omelette over low heat until lightly brown.

Sprinkle with fresh coriander.

Delicious with chapatti (or Lebanese bread) , coriander-mint chutney and cucumber.
