Lemon Posset

300 ml whipped cream
60 grams of sugar
1 lemon
few mint leaves

Historically, a "posset" (from English) is a drink made from hot milk curdled with beer, wine or other alcoholic beverage and typically flavored with herbs, drunk as a delicacy or as a remedy for colds.

Nowadays a cold dessert made from thickened cream, usually flavored with lemon.

So now that we know this... this is an incredibly delicious, fresh and velvety dessert. We know the recipe from Janneke Vreugdenhil from her NRC column of June 22, 2007! Here the link!
Recipe only adapted to 4 people! What is perfect does not need to be changed.
You can make this well in advance, as long as it is in the refrigerator.

Preparation
Pour the whipped cream into a saucepan.
Add the sugar and bring to the boil while stirring.
Turn the heat down and let the cream boil for a minute.
Turn off the heat and let the cream cool.
Stir in the lemon juice (you can add the lemon zest if necessary).
The acid causes the cream to thicken.Pour the liquid into 4 glasses or bowls.
Put a mint leaf on it.
Cover with cling film and let the possets set in the refrigerator for at least five hours.
