Quince jelly with lemongrass and ginger

    A colleague had a harvest of almost 40 kilos this year, and I asked if I wanted some too. Yes please! We got 4 large pots.

    Delicious with yogurt and on a cracker.


    Quinces have a hairy exterior. You can easily weigh this out under the tap.

    Halve the (hard) quinces and grate them on a coarse grater in the food processor, core and all.

    Place the zest, sugar, crushed (bruising/ramming it on improves the flavour) sereh, cut open orange, cut open mandarin and some ginger balls in a saucepan.

    After an hour you will have a delicious reddish jelly.

    Store this in clean (jam-peanut butter jars)
