Ingredients

3 kg veal spareribs

Herbal rub:

  • 1 tbsp salt

  • 1 tbsp brown caster sugar

  • 1 tbsp paprika powder

  • 1 tbsp cumin powder (djinten)

  • 1 tbsp onion powder

  • 1 tbsp garlic powder

  • 1 tbsp sumac

  • 1 tsp pul biber (or more if you like it spicy)

Preparation

Mix these herbs together and rub the veal ribs thoroughly on both sides.

Place them in a closed container in the refrigerator overnight (12 hours).

The next day, heat the convection oven to 160 degrees.

Take the marinated veal ribs from the refrigerator and place them with the hollow side down on a tray

oven rack. Cover with aluminum foil. Fill an oven baking tray with a layer of water of 1 cm and place the rack with meat on it and place in the middle of the oven for 2 hours.

After cooking in the oven for 2 hours, rub the veal ribs on both sides with this BBQ sauce and let them brown without foil at the top of the oven for another half hour.

This is going to be delicious!

Preparation of BBQ sauce

Now you will make the BBQ sauce:

  • 250 ml ketchup

  • 30 ml Worchester sauce

  • 1 tbsp sharp mustard

  • 1 tbsp garlic powder

  • 1 tbsp onion powder

  • 1 tsp cumin powder

  • 1 tsp dried thyme

  • 1 tsp pul biber (or more if you like it spicy)

  • 1 tsp smoked paprika powder

  • 1 tbsp brown caster sugar

Mix all ingredients together in a pan.

Bring to the boil and simmer for 30 minutes, stirring occasionally.
