    Ghee is butter without milk solids. The advantage is that you can heat ghee higher than butter.


    Melt the butter in a pan over medium heat.

    After a few minutes the milk solids sink to the bottom.

    It will bubble and crackle quite a bit.

    After about 8 minutes the ghee is ready.

    Strain the ghee through a fine sieve so that the milk solids remain in the sieve.

    Place in a jar and store for use.
