Roasted vegetables (winter)

  • 1 celeriac

  • 1 red pepper

  • 1 yellow pepper

  • 1 green pepper

  • 3 sweet potatoes

  • 3 carrots

  • 3 pink onions

  • 12 (mini) tomatoes

  • 6 cloves of garlic

  • 2 tbsp lemon juice

  • some olive oil

  • 1 tbsp thyme

  • 1 tbsp rosemary

Preheat the oven to 180 degrees.

Peel the celeriac, sweet potatoes, carrots and cut into (edible) pieces.

Peel the onions and cut into half rings.

Peel the garlic and cut into slices

Throw it all on the oven tray.

Sprinkle the thyme and rosemary over it.

Sprinkle everything first with lemon juice and then with the olive oil.

Mix everything together.

Place in the oven and roast for 45 minutes.

Add sea salt at the end.

Very tasty with tuna-mint dressing,
