BBQ sauce

Ingredients
2 tbsp cooking olive oil
600 ml ketchup
1 onion
2 cloves of garlic
50 ml apple cider vinegar (or natural vinegar)
2 tbsp brown caster sugar
60 ml of honey
30 ml Worcestershire sauce
1 tbsp (boiling) cognac
1 tbsp mustard
2 tbsp smoked paprika powder
1.5 tbsp pul biber
1 tsp black pepper
half tsp allspice powder
Preparation
Finely chop the onion and garlic.
Heat the oil in a pan over low heat and stir-fry the onions until they are translucent.
Add the garlic and stir through.
Add salt, pepper, pul biber and allspice powder and stir.
Now add the ketchup and stir again.
Then add the (apple) vinegar, brown caster sugar, honey, Worcestershire sauce, (cooking) cognac, mustard and smoked paprika powder and stir everything thoroughly.
Then comes the most important thing...tasting!
If you want sweeter, add some honey.
A bit more acidic, then add some vinegar.
Spicier than some pul biber.
Add a little more smoke flavor than some smoked paprika powder.
Let everything simmer for 15 minutes, but keep stirring otherwise it will burn!
Cool and your delicious sauce for the Pulled Pork is ready.
This sauce can be stored in a sealed container in the refrigerator for a number of weeks.
