Banana bread muffins

  • 75 grams of oatmeal

  • 50 g coconut flour

  • 50 g almond flour

  • 1 tbsp cocoa

  • 1 tbsp cinnamon

  • 2 tsp baking soda

  • 3 bananas

  • 3 eggs

  • 4 dates

  • 3 tbsp sunflower oil

  • 4 tbsp cacao nibbs

  • 2 tbsp sunflower seeds

  • 2 tbsp pumpkin seeds

  • 2 tbsp linseed

  • 4 tbsp cranberries

  • 12 or more nuts to taste

  • 2 tbsp sesame seeds

Grab a mixing bowl and add oatmeal, coconut flour, almond flour, cocoa, cinnamon and baking soda.

Peel the bananas and add them in pieces, as well as the peeled eggs, the dates in pieces without pits and the sunflower oil.
Place the hand blender in here and mix until a reasonably smooth substance. As coarse as you want.

Preheat the oven to 200 degrees.

Add the cacao nibbs, all the kernels, linseed and cranberries and stir.
Fill the muffin tin with the paper cases and divide the mixture into it.
Press one or more nuts into each muffin and sprinkle some sesame seeds on top.
Place the tin in the oven and bake for 40 minutes.

After baking, remove the muffins from the mold, let cool and store them in a sealed container in the refrigerator.

Delicious for breakfast with a cup of coffee or tea!
