4 Eggplants
70 ml of oil
50 g pomegranate seeds (from the box)
half bunch of coriander
For Curry Yoghurt300 ml Greek yoghurt
1 tbsp curry powder
1 tsp turmeric
zest of 1 lemon and
the juice of the same lemon2 tbsp garam masala
some salt
some sugar
1 tsp cumin seeds
For Almond Crumble​1 onion (large)​
1 tsp curry powder
50 g slivered almonds
some salt
tbsp honey (optional, but I wouldn't do it!)

Original recipe is from Otolegi from his cookbook; Easy.
In particular, we have adjusted the amounts of spices to give it a more pronounced Asian flavor. We also like it as a side dish with Indian menu/dishes.
