Eggplant with yogurt

In ingredients

​For Eggplant

  • 4 Eggplants

  • 70 ml of oil

  • 50 g pomegranate seeds (from the box)

  • half bunch of coriander

    For Curry Yoghurt

  • 300 ml Greek yoghurt

  • 1 tbsp curry powder

  • 1 tsp turmeric

  • zest of 1 lemon and
    the juice of the same lemon

  • 2 tbsp garam masala

  • some salt

  • some sugar

  • 1 tsp cumin seeds

    For Almond Crumble

  • ​1 onion (large)​

  • 1 tsp curry powder

  • 50 g slivered almonds

  • some salt

  • tbsp honey (optional, but I wouldn't do it!)

Oven, baking paper, frying pan

    In particular, we have adjusted the amounts of spices to give it a more pronounced Asian flavor. We also like it as a side dish with Indian menu/dishes.
