Atjar ketimoen / sweet and sour with cucumber

Ingredients
1 seeded cucumber
1 red onion
1 chili pepper
2 dl vinegar
2 dl water
2 tbsp sugar
Preparation
Finely chop the chili pepper and remove the seeds from the cucumber.

Heat the vinegar with the finely chopped chili pepper, sugar and water.
Remove the seeds from the cucumber and cut into small pieces.
Cut the onion into half rings.
​
Take a clean jar and put the cucumber and onion in it.
Pour this with the vinegar mixture.
​
Delicious with spicy Indian rice table.
